    Melt the Chocolate

    Break the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Whip the Cream

    In a separate bowl, pour in the heavy cream and whip it using an electric mixer until soft peaks form. Be careful not to overwhip the cream.

    Prepare the Egg Mixture

    In another bowl, whisk together the eggs, granulated sugar, vanilla extract, and a pinch of salt until the mixture is pale and slightly thickened.

    Combine Chocolate and Egg Mixture

    Slowly pour the melted chocolate into the egg mixture, stirring continuously to prevent the eggs from cooking. Mix until fully combined and smooth.

    Fold in Whipped Cream

    Gently fold the whipped cream into the chocolate mixture in three parts. Start with one-third of the whipped cream to lighten the mixture, then fold in the remaining cream until no white streaks remain.

    Chill the Mousse

    Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

    Serve

    Once chilled and set, serve the chocolate mousse with additional whipped cream or chocolate shavings on top, if desired.
