Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with cocoa powder to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Let it cool slightly.

Mixing

  1. 3

    Combine Dry Ingredients

In a separate mixing bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

  2. 4

    Mix Wet Ingredients

In another bowl, beat the eggs and vanilla extract together until frothy. Slowly pour in the melted chocolate and butter mixture, mixing until combined.

  3. 5

    Combine Mixtures

Gradually add the dry ingredients to the chocolate mixture, stirring gently until just combined. Be careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

  3. 8

    Cool

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.

Serving

  1. 9

    Serve Hot

Invert each ramekin onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream on the side to enjoy with the warm, gooey center.
