Method
Pasta Preparation
- 1
Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
- 2
Drain and Set Aside
Once cooked, drain the pasta in a colander and set aside. Do not rinse.
Chicken Preparation
- 3
Season the Chicken
While the pasta is cooking, season the chicken breasts with salt and black pepper on both sides.
- 4
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Remove from skillet and let rest before slicing.
Alfredo Sauce Preparation
- 5
- 6
Add Cream and Cheese
Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until fully melted and combined. Cook for an additional 2-3 minutes, stirring frequently. If the sauce is too thick, you can add a little pasta water to reach your desired consistency.
- 7
Combine Pasta and Sauce
Add the drained fettuccine to the skillet and toss to coat the pasta with the creamy Alfredo sauce.
Final Assembly
- 8
Slice Chicken and Serve
Slice the cooked chicken breasts and place them on top of the pasta. Sprinkle with chopped parsley for garnish and serve immediately.
