Crust Preparation

    Preheat Oven

    Preheat your oven to 325°F (160°C).

    Mix Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

    Form Crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup or your fingers to press it down.

    Bake Crust

    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let cool while you prepare the filling.

Filling Preparation

    Prepare Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar

    Gradually add 1 cup of granulated sugar to the cream cheese, mixing until well combined.

    Incorporate Sour Cream and Vanilla

    Add 0.5 cups of sour cream and 1 tsp of vanilla extract. Mix until fully incorporated and smooth.

    Add Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Pour Filling into Crust

    Pour the cream cheese filling into the baked crust, spreading it evenly.

    Bake Cheesecake

    Bake in the preheated oven for 55-60 minutes or until the center is set and only slightly jiggly. The edges should be lightly browned.

    Cool Down

    Turn off the oven and crack the oven door, letting the cheesecake cool in the oven for 1 hour to prevent cracking.

    Chill

    Remove the cheesecake from the oven and let it cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight before serving.
