Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.

Fry the Plantains
Heat vegetable oil in a large skillet over medium heat. Once hot, fry the plantain slices for about 3-4 minutes on each side, or until they are golden brown.

Smash the Plantains
Remove the fried plantains from the oil and drain on paper towels. Use the bottom of a glass or a flat surface to gently smash each slice to about 1/2 inch thick.

Second Fry
Return the smashed plantains to the hot oil and fry again for another 2-3 minutes until crispy. Drain on paper towels and sprinkle with salt.

Make the Garlic Sauce
In a small bowl, mix together minced garlic, mayonnaise, lemon juice, and salt to taste.

Serve
Serve the tostones hot with the garlic sauce on the side for dipping.
