1. Cook Quinoa
Rinse quinoa under cold water. In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside.
2. Cook Turkey
In a large skillet, heat olive oil over medium heat. Add diced red onion and bell pepper. Sauté for 5 minutes until softened. Add minced garlic and cook for another minute.
3. Combine Ingredients
Add ground turkey to the skillet. Cook until browned and cooked through, about 7-10 minutes. Stir in black beans, cooked quinoa, cumin, chili powder, salt, and black pepper. Mix well and cook for an additional 5 minutes.
