1. Searing the Chicken

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and sear them until golden brown on all sides. Remove the chicken from the pot and set aside.

2. Sautéing the Vegetables

In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the onions are translucent and the vegetables are softened, about 5-7 minutes.

3. Adding the Tomatoes and Spices

Add the chopped tomatoes, cumin, paprika, bay leaf, salt, and black pepper to the pot. Stir well and cook for another 5 minutes.

4. Simmering the Chicken

Return the seared chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.

5. Finishing Touches

Remove the bay leaf, stir in the fresh cilantro, and adjust the seasoning if needed. Serve hot with rice or bread.
