    Prepare the Base

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened.

    Add Garlic and Tomatoes

    Stir in the minced garlic and diced tomatoes, cooking for another 2-3 minutes until the tomatoes are slightly softened.

    Incorporate Spices and Rice

    Add the saffron, smoked paprika, and rice to the pan. Stir well to coat the rice with the oil and spices.

    Add Broth

    Pour in the chicken broth, season with salt and black pepper, and bring to a boil. Once boiling, reduce the heat to a simmer and cover the pan.

    Add Seafood

    After about 10 minutes, add the shrimp, mussels, clams, and peas. Cover again and cook for an additional 10-15 minutes, until the seafood is cooked through and the rice is tender.

    Finish and Serve

    Remove the pan from heat and let it sit for a few minutes. Garnish with lemon wedges and chopped parsley before serving.
