    Cut the beef into large chunks and season with salt and black pepper. Prepare the vegetables by chopping the onion, garlic, bell pepper, tomatoes, potatoes, and carrots.

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef chunks and sear on all sides until browned. Remove the beef and set aside.
