Marinate the Pork
Using a sharp knife, make deep cuts in the pork shoulder. Rub the marinade all over the pork, ensuring it gets into the cuts. Place bay leaves on top of the meat.
- 3
Refrigerate
Cover the pork with plastic wrap and refrigerate for at least 12 hours, preferably 24 hours for maximum flavor.
- 4
Preheat the Oven
Preheat your oven to 300°F (150°C).
- 5
Roast the Pork
Place the marinated pork in a roasting pan and cover it with aluminum foil. Roast for about 4 hours, or until the meat is tender and falls off the bone.
- 6
Crisp the Skin
Remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30 minutes or until the skin is crispy.
- 7
Rest and Serve
Remove the pork from the oven and let it rest for 20 minutes before slicing. Serve with your choice of sides.
