1. Prepare the Ingredients
Gather all the ingredients and prepare them by chopping vegetables and beating the eggs.
2. Cook the Eggs
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.
3. Sauté the Vegetables
In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and chopped onion, and sauté until fragrant. Then, add the diced carrots and peas, cooking for about 5 minutes until tender.
4. Combine Rice and Seasoning
Add the cooked rice to the pan with vegetables. Pour in the soy sauce, salt, and pepper. Stir well to combine all the ingredients.
5. Add Eggs and Green Onions
Return the scrambled eggs to the pan and add the sliced green onions. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
6. Serve
Remove from heat and serve the Chofan hot, garnished with extra green onions if desired.
