Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Add granulated sugar and beat until well combined. Mix in sour cream and vanilla extract. Add eggs one at a time, mixing well after each addition until the batter is smooth and creamy.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggles. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight for best results.

Prepare the topping
Before serving, wash and slice the fresh strawberries. Toss them with powdered sugar in a bowl and let sit for about 10 minutes to release their juices.

Serve
Remove the sides of the springform pan. Top the cheesecake with the strawberries before slicing and serving.
