Mousse Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let it cool slightly.

    Beat Egg Yolks

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick. Stir in the melted chocolate mixture and vanilla extract, mixing until well combined.

    Whip Egg Whites

    In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gradually fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Pour the mousse mixture into individual serving dishes or one large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Whipped Cream Topping

    Prepare Whipped Cream

    In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract together on medium-high speed until soft peaks form. Be careful not to overwhip.

    Serve

    Once the mousse has set, dollop or pipe the whipped cream on top of each serving. Optionally, garnish with chocolate shavings or berries before serving.
