    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.

    Sear the Salmon

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the salmon fillets with salt and black pepper. Place the fillets skin-side down in the skillet and cook for about 4-5 minutes until crispy. Flip and cook for an additional 3-4 minutes or until cooked to your preference. Remove from skillet and keep warm.

    Cook the Asparagus

    In the same skillet, add the remaining 2 tablespoons of olive oil. Add the asparagus and sauté for 4-5 minutes until tender and slightly charred. Season with salt and pepper.

    Prepare the Salad

    In a large bowl, combine arugula with balsamic vinegar, tossing to coat. Season with salt and pepper to taste.

    Plate the Dish

    On a plate, arrange the crispy potatoes, top with the seared salmon, and serve with sautéed asparagus and arugula salad on the side.
