Preparation

    Cook the Carne Asada

    Season the carne asada with salt and pepper. Grill or pan-sear over medium-high heat for about 7-10 minutes per side, or until desired doneness. Let it rest and then slice it thinly.

    Prepare the Potato

    Peel and dice the potato into small cubes. Boil in salted water until tender, about 10-15 minutes. Drain and set aside.

    Make the Scrambled Eggs

    In a bowl, whisk the eggs with salt and black pepper. In a skillet, melt butter over medium heat, then pour in the eggs and gently scramble until cooked through.

    Prepare Pico de Gallo

    Dice the tomatoes and onion, and chop the cilantro. In a bowl, combine these ingredients with the juice of the lime, and mix well.

Assembly

    Assemble the Burritos

    On each large tortilla, layer the carne asada, scrambled eggs, potatoes, black beans, pico de gallo, and queso. Fold the sides of the tortilla in, then roll from the bottom to enclose the filling.

    Cut the burritos in half and serve warm with extra pico de gallo and queso on the side if desired.
