Prepare Milk

In a large pot, pour in the whole milk and heat it over medium heat until it reaches about 190°F (88°C). Stir occasionally to prevent sticking.

Add Vinegar

Once the milk has reached the desired temperature, remove it from the heat and slowly add the white vinegar while gently stirring. Let it sit for about 10 minutes to allow the curds to form.

Strain Curds

Using a cheesecloth or fine strainer, pour the curds and whey into the cloth, allowing the whey to drain off. Gather the corners of the cloth and twist to remove excess whey.

Season Cheese

Once drained, transfer the curds to a bowl. Add salt and mix well. If desired, incorporate rennet and any herbs or spices for flavor.

Mold and Chill

Press the curds into a mold or form into a ball. Refrigerate for at least 1 hour to firm up before serving.
