Prepare the Broth
In a saucepan, heat the vegetable broth over low heat. Keep it warm but not boiling as you'll be adding it to the risotto gradually.

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
Cooking the Risotto

Toast the Rice
Add the Arborio rice to the skillet and stir to coat the grains with the oil. Cook for about 2 minutes until the rice is slightly translucent.

Add the Wine
Pour in the white wine and stir until it is mostly absorbed by the rice.

Incorporate Broth Gradually
Start adding the warm vegetable broth to the rice one ladle at a time, stirring frequently. Wait until the liquid is almost completely absorbed before adding the next ladle. This process should take about 18-20 minutes.

Add Vegetables
After about 10 minutes of cooking the rice, add the chopped asparagus, diced carrots, and peas. Continue to add broth and stir as needed.

Finish with Spinach and Cheese
When the rice is al dente and creamy, add the chopped spinach, grated Parmesan cheese, salt, and black pepper. Stir until the spinach wilts and the cheese melts.

Serve the risotto hot, garnished with fresh parsley and lemon zest.
