Seasonal Flavor Ingredients

Method

Base Preparation

  1. 1

    Combine Milk and Cream

In a medium saucepan over medium heat, combine the whole milk and heavy cream. Stir occasionally until the mixture is hot but not boiling.

  2. 2

    Whisk Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

  3. 3

    Temper the Eggs

Slowly pour a small amount of the hot milk mixture into the egg yolk mixture, whisking constantly to prevent curdling. Gradually add the rest of the milk mixture while whisking.

  4. 4

    Cook the Mixture

Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).

  5. 5

    Add Vanilla

Remove the pan from heat and stir in the vanilla extract. Allow the base mixture to cool, then refrigerate for at least 4 hours or overnight.

Flavoring and Churning

  1. 6

    Prepare Seasonal Flavors

For strawberry and peach gelato, puree the fresh strawberries and peaches in a blender until smooth. For pumpkin gelato, mix the pumpkin puree with cinnamon and nutmeg.

  2. 7

    Mix Flavors with Base

Once the base has cooled, divide it into three equal parts. Mix one part with the strawberry puree, another with the peach puree, and the final part with the pumpkin mixture, ensuring each is well combined.

  3. 8

    Churn the Gelato

Pour each flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  4. 9

    Freeze the Gelato

Transfer each flavored gelato into separate airtight containers and freeze for at least 4 hours until firm.
