Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare Ramekins

    Grease four ramekins (6 oz size) with butter and dust with flour. Set aside.

Making the Cake Batter

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

    Mix Eggs and Sugar

    In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until pale and slightly thickened.

    Combine Mixtures

    Pour the melted chocolate mixture into the egg mixture. Add vanilla extract and a pinch of salt. Stir until combined.

    Add Flour

    Sift the all-purpose flour over the chocolate mixture and gently fold it in until just combined. Be careful not to overmix.

Baking

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

    Cool Slightly

    Once baked, remove from the oven and let sit for 1 minute.

Serving

    Invert and Serve

    Carefully run a knife around the edges of each ramekin and invert the cakes onto individual plates. Serve immediately with a scoop of vanilla ice cream on top and sprinkle with chocolate shavings or cocoa powder as desired.
