Method

Preparation Steps

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (392°F). This will ensure that your chocolate fondants bake evenly.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler method) and stir occasionally until melted and smooth. Remove from heat and let it cool slightly.

  3. 3

    Whisk Eggs and Sugar

In a separate mixing bowl, whisk together the granulated sugar and large eggs until the mixture is pale and fluffy. This should take about 2-3 minutes.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg and sugar mixture, whisking continuously to combine. Add the vanilla extract and a pinch of salt.

  5. 5

    Add Flour

Sift in the all-purpose flour and gently fold it into the batter until just combined. Be careful not to overmix.

  6. 6

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with cocoa powder or flour to prevent the fondants from sticking. Tap out any excess.

  7. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full to allow space for rising.

  8. 8

    Bake

Place the filled ramekins on a baking tray and bake in the preheated oven for about 12-14 minutes, or until the edges are set but the center remains soft.

  9. 9

    Cool and Serve

Remove the fondants from the oven and let them cool for 1 minute. Carefully run a knife around the edges, then invert each ramekin onto a serving plate. Serve immediately, optionally with a dusting of powdered sugar or a scoop of vanilla ice cream.
