Preparation of Calamari

Prepare the Squid
If not already cleaned, clean the squid by removing the head, innards, and cartilage. Rinse well under cold water and slice into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to create a dry batter.

Coat the Squid
Dip the squid rings into the beaten eggs, making sure they are fully coated. Then, dredge them in the flour mixture, shaking off any excess flour.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Calamari
In batches, fry the coated squid rings for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Combine Ingredients
In a small bowl, mix mayonnaise, Sriracha sauce, fresh lime juice, minced garlic, and chili powder until well combined.

Serve
Transfer the dipping sauce to a serving bowl. Serve alongside the fried calamari.
