Method

Preparing the Calamari

    Clean and Cut Calamari

    Rinse the fresh calamari under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

    Prepare the Breading

    In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

    Set up the Breading Station

    In a separate bowl, whisk together the eggs and buttermilk until well combined. Set up your breading station with the flour mixture, the buttermilk-egg mixture, and a plate for the breaded calamari.

    Bread the Calamari

    Dredge each calamari ring first in the flour mixture, then dip in the buttermilk-egg mixture, and finally coat again with the flour mixture. Place on the plate until ready to fry.

Frying the Calamari

    Heat the Oil

    In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.

Making the Marinara Sauce

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

    Simmer the Sauce

    Add the crushed tomatoes, dried oregano, salt, and black pepper. Stir well and let it simmer for about 10-15 minutes, allowing the flavors to meld.

    Finish the Sauce

    Just before serving, stir in the fresh basil leaves and remove from heat.

    Plate the Dish

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
