Method
Preparation
- 1
Preheat the oven
Preheat your oven to 400°F (200°C) to ensure it's hot enough for baking the chicken.
- 2
Prepare the chicken
Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
- 3
Set up the breading station
In a shallow dish, beat the eggs. In another shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and black pepper.
Cooking
- 4
Coat the chicken
Dip each chicken breast into the beaten eggs, allowing any excess to drip off, then coat it thoroughly with the Parmesan-breadcrumb mixture, pressing gently to ensure it adheres.
- 5
Heat the oil
In a large oven-safe skillet, heat the olive oil over medium heat until shimmering.
- 6
Sear the chicken
Add the breaded chicken breasts to the skillet and cook for 3-4 minutes on each side until golden brown.
- 7
Bake the chicken
Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
- 8
Rest and serve
Remove the skillet from the oven, let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
