1. Prepare the Marinade

In a medium bowl, whisk together the olive oil, soy sauce, minced garlic, chopped rosemary, black pepper, and salt until well combined.

2. Marinate the Beef

Cut the beef tenderloin into 1-inch thick medallions. Place the medallions in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

3. Preheat the Grill

Preheat your grill to high heat (about 450°F to 500°F).

4. Grill the Medallions

Remove the beef medallions from the marinade, allowing any excess to drip off. Place the medallions on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness.

5. Rest the Meat

Once cooked, remove the medallions from the grill and let them rest for about 5 minutes to retain their juices.

Sprinkle the grilled tenderloin medallions with chopped fresh parsley and serve with lemon wedges on the side.
