Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.

Add Garlic and Other Vegetables

Stir in the minced garlic and cook for another minute. Then, add the diced carrots, celery, bell pepper, and zucchini. Sauté for approximately 5-7 minutes until the vegetables are tender.

Combine the Base Ingredients

Pour in the vegetable broth, canned diced tomatoes, corn, black beans, chili powder, cumin, salt, and black pepper. Stir well to combine all ingredients.

Simmer the Soup

Increase the heat to medium-high and bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes, allowing the flavors to meld together.

Finish with Lime Juice

After simmering, stir in the lime juice and adjust seasoning if necessary.

While the soup is simmering, prepare your toppings such as tortilla chips, avocado slices, chopped cilantro, and lime wedges.
