Preparation of Mussels

    Clean the Mussels

    Rinse the mussels under cold running water, scrubbing the shells with a brush to remove any dirt or debris. Remove any beards (the fibrous threads) by tugging them out firmly.

    Check for Freshness

    Discard any mussels that are cracked or open and do not close when tapped.

Making the Coconut and Curry Sauce

    Combine Ingredients

    In a medium saucepan over medium heat, combine the coconut milk, curry powder, minced garlic, grated ginger, lime juice, salt, and black pepper. Stir well to combine.

    Heat the Sauce

    Bring the sauce to a gentle simmer, stirring occasionally. Let it simmer for about 5 minutes, allowing the flavors to meld together.

Steaming the Mussels

    Steam the Mussels

    In a large pot, add the cleaned mussels and pour the coconut and curry sauce over them. Cover the pot with a lid.

    Cook the Mussels

    Heat the pot over medium-high heat and steam the mussels for about 5-7 minutes, or until the mussels open up. Discard any mussels that do not open.

Serving

    Plate the Dish

    Using a slotted spoon, transfer the steamed mussels to a serving dish. Drizzle any remaining sauce from the pot over the mussels.

    Garnish

    Sprinkle chopped fresh cilantro on top for garnish. Serve immediately with lime wedges on the side.
