Preparation

    Make the Marinade

    In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined.

    Marinate the Seafood

    Place the salmon fillets, swordfish steaks, gulf shrimp, and scallops into separate resealable plastic bags or shallow dishes. Pour the marinade evenly over each type of seafood, making sure they are well coated. Seal the bags or cover the dishes and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling

    Prepare the Grill

    Preheat your grill to medium-high heat. Oil the grill grates with a paper towel dipped in vegetable oil to prevent sticking.

    Grill the Salmon

    Remove the salmon from the marinade and place it on the grill. Cook for about 6-8 minutes per side, or until the salmon flakes easily with a fork.

    Grill the Swordfish

    Place the swordfish steaks on the grill and cook for about 4-5 minutes per side, or until they are opaque and easily flake with a fork.

    Grill the Shrimp

    Thread the gulf shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Grill the shrimp for about 2-3 minutes per side, until they turn pink and opaque.

    Grill the Scallops

    Place the scallops directly on the grill or on a grill pan. Grill for about 2-3 minutes per side, until they are firm and have nice grill marks.

Serving

    Plate the Seafood

    Once all seafood is grilled to perfection, remove from the grill and let rest for a couple of minutes. Arrange on a large platter and serve with lemon wedges and additional chopped parsley if desired.
