Crust Preparation
- 1
Prepare the crust
Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture is well combined and resembles wet sand.
- 2
Form the crust
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan. Make sure it's even and packed tightly.
- 3
Bake the crust
Bake the crust in the preheated oven for about 8 minutes, or until it is lightly golden. Remove from the oven and let it cool while preparing the filling.
Filling Preparation
- 4
Mix the filling
In a large mixing bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth and well combined. Add in the lime zest and mix well.
- 5
Fill the crust
Pour the lime filling into the cooled graham cracker crust, spreading it evenly.
- 6
Bake the pie
Bake the pie in the oven at 350°F (175°C) for about 10-12 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool at room temperature before refrigerating.
Topping Preparation
- 7
Whip the cream
In a mixing bowl, use an electric mixer to whip the heavy whipping cream until soft peaks form. Gradually add in the powdered sugar and continue to whip until stiff peaks form.
- 8
Top the pie
Once the pie is completely chilled, spread the whipped cream over the top of the pie evenly. Garnish with lime slices if desired.
