Preparing the Salmon

    Marinate the Salmon

    In a small bowl, combine the olive oil, lemon juice, garlic powder, salt, black pepper, and fresh dill (if using). Mix well.

    Add Marinade to Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Let them marinate for at least 15 minutes.

Preparing the Vegetables

    Prepare the Vegetables

    While the salmon is marinating, slice the zucchini and bell pepper into bite-sized pieces. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

Grilling

    Heat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Once the grill is hot, place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes, then carefully flip and grill for another 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    On a grill-safe tray or skewers, place the seasoned vegetables and grill alongside the salmon for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

    Plate the Dish

    Remove the salmon and vegetables from the grill. Serve the grilled salmon fillets with the grilled vegetables on the side. Optionally, garnish with a slice of lemon or additional dill.
