Method

Preparation

  1. 1

    Prepare the Flounder

Pat the flounder fillets dry with paper towels. Season both sides with salt and black pepper.

Cooking

  1. 2

    Sear the Flounder

In a large skillet, heat 2 tablespoons of butter over medium-high heat. Once the butter is melted and foamy, add the flounder fillets. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Remove the fillets from the skillet and set aside on a plate.

  2. 3

    Make the Brown Butter Sauce

In the same skillet, reduce the heat to medium and add the remaining 4 tablespoons of butter. Allow it to melt and then cook until it turns golden brown and smells nutty, about 3-5 minutes. Be careful not to burn it.

  3. 4

    Add Capers and Lime

Once the butter is browned, add the capers, lime juice, and lime zest to the skillet. Stir to combine and cook for another 1-2 minutes to heat through.

Serving

  1. 5

    Plate the Dish

Place the flounder fillets on individual plates and spoon the brown butter sauce over the top. Garnish with chopped fresh parsley.
