    Cook the Potatoes

    In a large pot, bring salted water to a boil. Add the cubed potatoes and cook for about 15 minutes or until tender. Drain and let cool slightly.

    Cook the Fish

    In the same pot, add the fish fillets and poach in simmering water for about 8-10 minutes or until cooked through. Drain and let cool.

    Chop the Vegetables

    While the fish and potatoes are cooling, finely chop the red onion and mince the garlic.

Mixing the Ingredients

    Mash the Potatoes

    In a large mixing bowl, mash the cooked potatoes until smooth.

    Flake the Fish

    Once the fish has cooled, flake it into the bowl with the mashed potatoes.

    Combine Ingredients

    Add the chopped red onion, minced garlic, chopped parsley, beaten egg, salt, black pepper, paprika, cayenne pepper, and lemon juice to the bowl. Mix everything together until well combined.

Forming and Cooking the Fish Cakes

    Shape the Mixture

    With your hands, form the mixture into small cakes, about 2 inches in diameter.

    Coat with Breadcrumbs

    Place the breadcrumbs on a plate and coat each fish cake with breadcrumbs, pressing gently to adhere.

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat.

    Fry the Fish Cakes

    Add the fish cakes to the skillet in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

    Drain and Serve

    Once cooked, transfer the fish cakes to a paper towel-lined plate to drain excess oil. Serve warm with a wedge of lemon and your choice of sauce.
