Preparing Fish Bites

Cut the Fish
Cut the fresh fish fillets into bite-sized pieces, about 2 inches in size.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches about 180°C (350°F).

Fry the Fish Bites
Dip each piece of fish into the batter, allowing excess to drip off. Carefully place it in the hot oil. Fry in batches for 4-5 minutes or until golden brown and cooked through, turning occasionally. Remove with a slotted spoon and drain on paper towels.

Combine Ingredients
In a small bowl, whisk together the soy sauce, grated ginger, minced garlic, honey, and sesame oil until well mixed.

Sprinkle the chopped green onions over the sauce for added flavor and presentation.
