Preparation

    Clean the Shrimp

    Rinse the colossal Gulf shrimp under cold water and remove the shells, leaving the tails intact. Devein the shrimp by making a shallow cut along the back and removing the dark vein.

    Make the Marinade

    In a medium bowl, combine the Calabrian chili paste, olive oil, minced garlic, lemon juice, salt, and black pepper. Whisk together until well combined.

    Marinate the Shrimp

    Add the cleaned shrimp to the marinade. Toss until the shrimp are evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Cooking

    Preheat the Grill

    Preheat your grill to medium-high heat, about 400°F (200°C). If using a charcoal grill, ensure the coals are hot and ashed over.

    Skewer the Shrimp

    Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.

    Grill the Shrimp

    Place the skewers on the preheated grill. Cook for about 2-3 minutes per side, or until the shrimp are opaque and lightly charred. Avoid overcooking to maintain their juiciness.

    Garnish and Serve

    Remove the shrimp from the grill and sprinkle with fresh chopped parsley. Serve immediately with lemon wedges on the side.
