Cooking the Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with a paper towel.

Make the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, cayenne pepper, garlic powder, salt, and black pepper. Mix well.

Bread the Calamari
Dip each calamari ring into the wet mixture, allowing excess to drip off, then coat with the breading mixture. Place the breaded calamari on a plate.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add a few breaded calamari rings to the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Making the Marinara Sauce

Sauté the Garlic
In a saucepan over medium heat, add olive oil and minced garlic cloves. Sauté for about 1-2 minutes until fragrant.

Add the Tomatoes and Seasonings
Pour in the canned crushed tomatoes and add oregano, basil, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally to prevent sticking.

Plate the Dish
Serve the fried calamari hot with a side of marinara sauce for dipping.
