Preparing the Tartar Sauce

    Mix the Ingredients

    In a medium bowl, combine the mayonnaise, roasted red peppers, capers, lemon juice, and chopped parsley. Mix well until all ingredients are thoroughly combined. Set aside in the refrigerator to chill.

Cooking the Cod

    Prepare the Cod

    Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Dredge in Flour

    Place the all-purpose flour in a shallow dish. Dredge each seasoned cod fillet in the flour, ensuring an even coating. Shake off any excess flour.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Cook the Cod

    Carefully place the dredged cod fillets in the hot skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. The fish should flake easily with a fork.
