Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and drain on paper towels.

Fry the Eggs

In the same skillet, crack the eggs and cook to your desired doneness (sunny-side up or over-easy). Season with salt and pepper to taste.

Prep the Vegetables

Slice the tomato and chop the green onions finely.

Toast the Bagels

Cut the everything bagels in half and toast them until golden brown.

Assemble the Sandwich

Spread herb cream cheese on both halves of the toasted bagels. Layer spinach, tomato slices, crispy bacon, and fried eggs on the bottom half. Top with chopped green onions and cover with the other half of the bagel.

Prepare Home Fries

In a separate skillet, cook diced potatoes in butter or oil until crispy and golden brown. Season with salt and pepper.

Serve the Sunrise Sandwich with a side of home fries.
