Cook the Home Fries

Peel and dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat. Add diced potatoes, salt, and pepper. Cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

Cook the Sausage and Bacon

In another skillet, cook the breakfast sausage over medium heat until fully cooked, about 5-7 minutes. Remove and set aside. In the same skillet, cook the applewood smoked bacon until crispy, about 4-5 minutes. Drain excess fat.

Assemble the Burritos

Lay a tortilla wrap on a flat surface. Spread a layer of queso in the center, followed by a scoop of home fries, crumbled sausage, and bacon. Add a spoonful of tomato salsa and optional green onions.

Wrap the Burritos

Fold in the sides of the tortilla and roll tightly from the bottom up. Repeat with the remaining tortillas.

Serve

Serve the burritos warm with extra salsa on the side.
