Prepare the Quinoa

    Cook the Quinoa

    In a small pot, combine 0.5 cups of quinoa with 1 cup of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the water is absorbed. Remove from heat and let it cool.

Make the Patty Mixture

    Combine Ingredients

    In a large bowl, mash 1 cup of black beans with a fork or potato masher until mostly smooth. Add the cooked quinoa, 0.25 cups of finely chopped onion, 0.25 cups of finely chopped bell pepper, 2 minced garlic cloves, 1 egg, 1 tsp of cumin, 1 tsp of paprika, 0.5 tsp of salt, and 0.25 tsp of black pepper.

    Add Breadcrumbs

    Stir in 0.5 cups of breadcrumbs until the mixture is well combined and can hold its shape.

Form the Patties

    Shape the Patties

    Divide the mixture into two equal portions and shape them into patties.

Cook the Patties

    Cook the Patties

    Heat a non-stick skillet over medium heat with a little oil. Cook each patty for about 4-5 minutes on each side, or until golden brown and heated through.

Assemble the Burger

    Prepare the Toppings

    Slice the avocado in half, remove the pit, and scoop out the flesh. Mash it slightly with a fork and season with salt to taste. Prepare the spicy mayo.

    On each burger bun, place a cooked patty, top with mashed avocado, and drizzle with spicy mayo.
