Pretzel Bites
Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
Mix Ingredients
Add in the all-purpose flour and salt. Mix until a dough forms. Knead for about 5 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.
Shape the Pretzel Bites
Preheat the oven to 425°F (220°C). Divide the dough into small pieces and roll each piece into a rope, then cut them into bite-sized pieces.
Boil the Pretzel Bites
In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Boil the pretzel bites in batches for about 30 seconds each.
Bake
Place the boiled pretzel bites on a parchment-lined baking sheet. Brush with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.
Beer Cheese Dip
Melt the Cheeses
In a saucepan over medium heat, combine cream cheese and sharp cheddar cheese. Stir frequently until melted and smooth.
Serve
Transfer the beer cheese dip to a serving bowl and keep warm until ready to serve with pretzel bites.

Simply pour the yellow mustard into a small serving bowl for dipping.
