Working in batches, fry the tortilla triangles for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Finely dice the tomatoes, onion, and jalapeño pepper. Remove seeds from the jalapeño if you prefer less heat.
