Preparing the Potatoes

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into evenly sized sticks, approximately 1/4 inch thick.

    Soak the Fries

    Place the cut fries in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch.

    Dry the Fries

    After soaking, drain the potatoes and pat them dry using paper towels to remove moisture.

Frying the Fries

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.

    Drain the Fries

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil.

Finishing Touches

    Toss with Truffle Oil

    In a large bowl, toss the hot fries with truffle oil, ensuring they are evenly coated.

    Add Seasoning

    Sprinkle the grated Parmesan cheese, salt, black pepper, and optional parsley over the fries. Toss gently to combine.
