Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over the top. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

Grilling the Salmon

  1. 3

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prep the Vegetables

While the salmon is marinating, wash and cut the asparagus, bell pepper, and zucchini into bite-sized pieces.

  2. 5

    Season the Vegetables

In a bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once both the salmon and vegetables are done, remove them from the grill. Serve the grilled salmon on plates and arrange the grilled vegetables beside it. Optionally, garnish with fresh lemon wedges.
