Preheat your oven to 400°F (200°C). This will ensure that the Brussels sprouts roast evenly.

Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half if they are large, to ensure even roasting.

In a large mixing bowl, combine the halved Brussels sprouts with olive oil, salt, and black pepper. Toss until the Brussels sprouts are evenly coated.

Roast the Brussels Sprouts
Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside, tossing halfway through.

In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat, then reduce the heat to low and let it simmer for about 10-15 minutes, or until it thickens slightly.
