Brisket Preparation

Prepare the Brisket
Preheat your smoker to 225°F (107°C).

Season the Brisket
In a small bowl, mix smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this mixture all over the brisket.

Smoke the Brisket
Place the brisket in the smoker and cook for approximately 6-8 hours or until it reaches an internal temperature of 195°F (90°C).

Slice the Brisket
Once rested, slice the brisket against the grain into bite-sized pieces.
Queso Preparation

Melt the Cheese
In a medium saucepan over medium heat, combine shredded cheddar cheese, cream cheese, and milk. Stir until melted and smooth.

Add Jalapeños and Salsa
Stir in diced jalapeños and salsa. Continue to heat for an additional 2-3 minutes until heated through.

Layer the Nachos
On a large serving platter, spread a layer of tortilla chips. Top with sliced brisket, queso, and sliced jalapeños.

Finish with a generous scoop of pico de gallo on top.
