Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a bowl, mix together the smoked paprika, brown sugar, cayenne pepper, salt, and black pepper. Rub this mixture evenly over the pork chunks.

Cook the Pork
Place the seasoned pork in a slow cooker. Add sliced onion, minced garlic, and apple cider vinegar. Cover and cook on low for 8-10 hours or until the pork is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and add the BBQ sauce. Stir to combine and allow to cook for an additional 30 minutes on low.

Prepare the Vegetables
Shred the green cabbage and grate the carrot. Place them in a large mixing bowl.

Make the Dressing
In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine the Slaw
Pour the dressing over the cabbage and carrot mixture. Toss until all the vegetables are well coated. Cover and refrigerate for at least 30 minutes before serving.

Toast the Buns
Lightly toast the hamburger buns on a grill or in a toaster until golden brown.

Assemble the Sandwiches
Layer the pulled pork generously on the bottom half of each toasted bun. Top with a generous scoop of coleslaw, then place the top half of the bun on each sandwich.
