Preparation
Prepare Dry Ingredients
In a large mixing bowl, whisk together cornmeal, all-purpose flour, sugar, baking powder, salt, and guajillo chili powder until well combined.
Mix Wet Ingredients
In another bowl, whisk together milk, eggs, and melted unsalted butter until fully blended.
Combine Mixtures
Pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix.
Bake
Preheat your oven to 400°F (200°C). Grease an 8-inch square baking pan or cast-iron skillet. Pour the batter into the prepared pan and smooth the top. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
Let the cornbread cool for a few minutes before cutting into squares. Serve warm with honey and crema on the side.
