Make the caramel topping
In a medium saucepan over medium heat, melt 1/4 cup of unsalted butter. Once melted, add 1/2 cup of brown sugar and stir until combined and bubbling. Remove from heat.

Arrange pineapple and cherries
Pour the caramel mixture into the bottom of a 9-inch round cake pan. Arrange the pineapple rings on top of the caramel and place a maraschino cherry in the center of each pineapple ring.

Mix dry ingredients
In a large mixing bowl, whisk together 1.5 cups of all-purpose flour, 1 cup of granulated sugar, 2 tsp of baking powder, and 0.5 tsp of salt.

Cream butter and sugar
In another bowl, cream together 0.5 cups of softened unsalted butter and the remaining granulated sugar until light and fluffy. This should take about 3-5 minutes with an electric mixer.

Add eggs and vanilla
Add 2 large eggs one at a time, mixing well after each addition. Then stir in 1 tsp of vanilla extract.

Preheat oven
Preheat your oven to 350°F (175°C).

Pour batter over topping
Carefully pour the cake batter over the arranged pineapple and cherries in the cake pan, smoothing the top with a spatula.

Bake the cake
Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Serving

Cool and invert
Allow the cake to cool in the pan for about 10 minutes. Then, carefully invert the cake onto a serving platter, allowing the pineapple topping to show.
