Cooking the Chicken

Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and season with salt and black pepper.

Sauté the Chicken
In a large skillet, heat the vegetable oil over medium heat. Add the seasoned chicken pieces and cook for 5-7 minutes until browned on all sides. Remove the chicken from the skillet and set aside.
Making the Curry Sauce

Add Bell Pepper
Add the sliced bell pepper to the skillet and sauté for another 2-3 minutes.

Add Curry Powder
Sprinkle the curry powder over the vegetables and stir well to combine, cooking for 1 minute to release the flavors.

Add Coconut Milk
Pour in the coconut milk and stir until well combined. Bring to a gentle simmer.
Combining and Finishing

Combine Chicken and Sauce
Return the browned chicken to the skillet, stirring to coat the chicken in the curry sauce. Let it simmer for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce thickens.

Taste and adjust seasoning with additional salt or pepper if necessary. Serve the coconut curry chicken hot, garnished with fresh cilantro and lime wedges if desired.
