Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a rice cooker or pot, cook the rice according to package instructions. Once cooked, fluff with a fork and let it cool.

Prepare the Ingredients
Dice the pineapple, chop the green onions, and set aside. If using raw shrimp, peel and devein them.

Stir-fry the Shrimp
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.

Scramble the Eggs
In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble them until fully cooked. Remove and set aside with the shrimp.

Combine the Ingredients
Add the cooled rice to the skillet and stir-fry for 2-3 minutes until heated through. Then add the cooked shrimp, scrambled eggs, diced pineapple, and chopped green onions.

Add the Sauce
In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, salt, and black pepper. Pour this sauce over the rice mixture and stir well to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.

Finish with Cashews
Finally, stir in the chopped cashews and cook for another minute. Remove from heat and serve immediately.
