Preparing the Fish

    Marinate the Mahi Mahi

    In a bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Place the Mahi Mahi fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the fish.

    Grill the Fish

    Preheat the grill to medium-high heat. Remove the Mahi Mahi from the marinade and discard any leftover marinade. Place the fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

    In a medium saucepan, combine the basmati rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
